The must time is approximately 1 hour, allowing the aromas from the skin and flesh to come into contact. The must is then pressed. Due to the short must time, the anthocyanins (red pigments in the skin) are only very weakly dissolved. The must settles for about 24 hours to achieve a high degree of clarity; the must is prepared clear for fermentation, without substances that can cause flavor changes. Alcoholic fermentation occurs at approximately 16°C for about 6-7 weeks. Long fermentation times produce the important primary and secondary aromas, allowing the wines to retain their full aromatic potential. Filtration is done just before bottling.
