Must time approximately 1 hour, during which the aromas from the skin and pulp come into contact. The must is then pressed. Due to the short must time, the anthocyanins (red pigments in the skin) are only very weakly dissolved. Settling of the must for about 24 hours to achieve a high degree of clarification, the must is prepared clear for fermentation, without substances that can cause flavor changes. Alcoholic fermentation at about 16°C for approximately 6-7 weeks. Long fermentation times produce the important primary and secondary aromas, allowing the wines to retain their full aromatic potential. Filtration only shortly before bottling.
