As always with us, the ripe berries for this Morillon (Chardonnay) need to be pureed for about 12 hours. Then it is fermented in steel, and the entire remaining fermentation is carried out in new and older barrels (barriques). This wine was left on the full lees for 7 months, then racked and bottled after the new harvest. This Chardonnay comes from the Wielitsch vineyard, which has a southeastern orientation. This is different from the Sulz location, which is fully south-facing and therefore warmer. Here we have all the delicacies that South Styria can showcase with this variety. Lots of white fruit, white flowers, lushness. Yet this Morillon always remains on the fine, playful side. And as always with us, white fruit and freshness play a dominant role. Behind that lies the limestone chalk mountain. Salty and a certain spiciness. Shows great harmony. Absolutely a great wine. Pairs well with oysters, fish, chicken, and pork.
